Ingredients
500g shelled peanuts with skin
2 heads of garlic, cloves separated and peeled
½ teaspoon salt
½' teaspoon chilli powder (optional)
Chilli peppers (optional)
3 cups cooking oil
Method
Adobong mani is a beloved Filipino snack that perfectly blends crunchy peanuts with the rich flavors of garlic. Often enjoyed as street food, this simple yet satisfying treat involves frying peanuts until golden and crispy, then tossing them with crispy garlic and a sprinkle of salt. For an extra kick, some versions add chili peppers or chili powder, making it a flavourful and addictive snack.
1. Peel the garlic and slice it into thin chips.
2. Wash the peanuts thoroughly with water.
3. Blanch them in boiling water for 2 minutes, then drain and set aside.
4. Heat the cooking oil in a pot over medium heat. Add the garlic and fry until it turns golden to medium brown. Remove the garlic from the oil and set aside.
5. Adjust the heat to low and add the peanuts to the pot. Stir occasionally and fry for about 20 to 25 minutes until the peanuts are golden and crispy.
6. Remove the peanuts from the oil and use a strainer to drain any excess oil.
7. Transfer the peanuts to a mixing bowl. Add the fried garlic and optional chilli peppers. Mix thoroughly.
8. Sprinkle the salt and chilli powder (if using) over the peanuts and mix again until well coated.
9. Let the peanuts cool before serving as a snack or appetizer.
