Video recipe for gluten free Kerala-style Muthira or horse gram curry

Serves: 4
Ingredients
For pressure cooking:
200 gms horse gram
3 ½ l water
For masala paste:
5-6 shallots
1-2 green chillies
½ tsp of cumin seeds
½ tsp of coriander powder
1 tsp of red chilli powder
½ tsp of black pepper powder
2 cloves of garlic
2 tsp grated coconut
2 tsp of water
Salt to taste
For tamarind pulp:
1 small lemon-sized ball of tamarind
50 ml of water
For tempering:
1 ½ tsp of coconut oil
½ tsp of mustard Seed
2-3 cloves of shallots
2 dried red chillies
1 sprig of curry leaves
Method
Step: 1
Wash and drain the horse gram.
Step: 2
Dry roast the horse gram till the it turns slightly golden brown. Allow it to cool down.
Step: 3
Cook the horse gram well with 3 ½ cups of water in a pressure cooker for about 4 to 5 whistles. Then allow the pressure to release. The cooked horse gram must be soft when pressed yet retain its shape.

Soak the tamarind in 50 ml of water and keep it aside.
Step: 5
Drain the cooked horse gram using a strainer. Save the broth for making the curry.
Step: 6
Take two tablespoons of cooked horse gram and grind in the blender with little water add it into the broth and mix nicely to get the added taste.

Add the tamarind juice.
Step: 8
Grind together the ingredients listed under masala paste along with a bit of water to make a fine paste and then add it to the horse gram broth.

Heat the mixture (do not allow it to boil) and stir continuously while heating.
Step: 10
Finally, heat 1 ½ tablespoons of coconut oil in a small pan, splutter the mustard seeds, add chopped shallots and sauté till shallots turn golden brown, add dried red chillies, and then add a sprig of curry leaves. Sauté for a few seconds over a low flame. Pour the tempered spices over the curry.
Muthira curry is ready to be served hot with steamed rice.
